About The Beans
One of our most popular programs in the "beans" section is Pig Roasting. We have developed our own custom schedule for pig prep and subsequent roasting. I am a firm believer in bringing the meat to temperature as slowly as I can. This has produced the best results for us ... most tenderness, most flavor sealed in, most appealing presentation at our events. We routinely cook with temps as low as 205 degrees, to get our hogs where we want them...
